🥘 Paella Rules

Real paella valenciana has rabbit, chicken, green beans, and garrofó beans. No seafood. The seafood version is a different (also valid) dish. Paella is a Sunday family meal, cooked outdoors on a wood fire.

🍖 Jamón Ibérico

Jamón ibérico de bellota (acorn-fed Iberian pig) is among the world's greatest foods. The pigs roam oak forests, eat acorns, and hams cure for 36-48 months. The fat melts at room temperature.

🍢 Pintxos vs Tapas

Tapas are ordered small plates from a menu. Pintxos (Basque) are small bites on bread displayed on the bar. You take what you want, keep the toothpicks, pay per toothpick at the end.

⏰ When Spain Eats

Lunch: 2-4pm (the main meal). Dinner: 9-11pm. Tapas/pintxos: 7-9pm. The Spanish schedule is not compatible with jet lag. Just commit.

💸 Budget Reality

Pintxos: €2-4 each. Menú del día (set lunch with wine): €12-18. Restaurant dinner: €25-50. San Sebastián fine dining: €200-400.
